Reasons for making special food during festivals are:

People eat the foods as per availabilities of foods available in a particular season. But they mainly make meals on festival accordingly to the seasonal festivals.

The main moto to delicious foods at festivals is to meet their goals of getting to gather family members on one table during the festivals. This fulfills the virtue of togetherness.

Most of the people know which types of foods to prepare at what festivals and they cook accordingly meal on that seasonal festivals.

As everybody knows that there are so many festivals in India throughout the year, all people of India are heartily awaited for welcoming these festivals heartily.

Some of the festivals of India are very famous all over the world. But along with these festivals, the foods prepare during festivals are also very delicious. 

As all festivals come in different months or days in the year and in different seasons also. It means festivals' foods are also differentiated as per season.

In India, the foods have been systemized to cook as per the season by considering the weather conditions suitable to the human body & nutritious required, since many years ago, you can say, it follows from ancient times.

It means people of India make the foods according to the particular season and make special foods especially in the festival of that season.

I mean to say that on the day of festivals most the people make the food as per the particular festivals. 

The various foods items the people like to cook at festivals.

For example, people make the Diwali special foods such as sweets items at home, puri-bhaji, pakoras, various milk items, which means full meal dish, and eat together full-family.

At the festivals of Krishna-Janmashtami people like to eat Milk-Malpua, pulses veggie, and rice once a day.

The Shravan Maas is one of the holiest festivals of India. The Shravan Maas indicates the festival of the whole month. During the whole month, devotees make fast the whole month or mostly Shravan Somvaar(Monday). During fast people like to eat Farali light food like Sabudana, peanuts, fruits, milk, etc only. The Shravan Maas observe in the monsoon season.

The Mahashivratri is observed in March every year in the Spring Season(February-March) and on that day people make the fast and eat mostly fruits & roasted or boiled root-vegetables such as sweet potatoes, yam, potatoes, etc.(nutritious tuberous root) only. 

On the day of Sarad Punam, people put milk contains poha in a big bowl safely in the light of the full moon for hours, and after that people like to eat that cool doodh-poha. The story behind that is to get relaxation from the acidity issues.

In summer festivals people mostly like to eat mango juice with puri and one of pulse veggie.

The festivals of Autumn Season is nine days Navratri, people keep fasting and only like to eat a one-time meal of a large tuber called Suran(Elephant-foot-yam) and drink lemon juice.

Some of the festivals fall in winter season and summer season, people eat one-time full meal dish at evening as in these seasons their digestions are better and availability of all vegetables easily.

People carefully make foods in monsoon season's festivals according to this season to avoid digestive issues.

Meaning to say that the food menu system set for festivals since so many years ago, has been following by the people of India till today.
